Strawberry Spinach Salad with Balsamic Vinaigrette

Strawberry spinach salad is a delicious choice for your Spring time menu. Topped with crispy bacon, crumbled Danish blue cheese, sliced red onion and drizzled with an amazing balsamic vinaigrette.
Ingredients
Salad
- Baby spinach
- Stawberries, sliced
- Grape tomatoes, halved
- Danish Blue Cheese, crumbled
- Bacon, cooked and crumbled
- Red onion, sliced
Dressing
- 4 Tbs. balsamic vinegar
- 2 Tbs. red wine vinegar
- 1 Tbs. Dijon mustard
- 2 tsp. light brown sugar
- 2 garlic cloves, minced
- 2 tsp. poppy seeds
- 1/2 cup extra virgin olive oil
- Salt & pepper to taste
Directions
- Assemble salad with the first 5 ingredients.
- In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion. Season with salt and pepper to taste.
Yields about 1 cup dressing

Reminds me of spring! This salad is simple, light, and I'm sure very tasty. I love the addition of fresh strawberries and blue cheese. A lovely combo!
