Strawberry Spinach Salad with Balsamic Vinaigrette


Strawberry spinach salad is a delicious choice for your Spring time menu. Topped with crispy bacon, crumbled Danish blue cheese, sliced red onion and drizzled with an amazing balsamic vinaigrette.

Ingredients

Salad

  • Baby spinach
  • Stawberries, sliced
  • Grape tomatoes, halved
  • Danish Blue Cheese, crumbled
  • Bacon, cooked and crumbled
  • Red onion, sliced

Dressing

  • 4 Tbs. balsamic vinegar
  • 2 Tbs. red wine vinegar
  • 1 Tbs. Dijon mustard
  • 2 tsp. light brown sugar
  • 2 garlic cloves, minced
  • 2 tsp. poppy seeds
  • 1/2 cup extra virgin olive oil
  • Salt & pepper to taste

Directions

  1. Assemble salad with the first 5 ingredients.
  2. In a small bowl, mix together the first 6 ingredients of the dressing.  Slowly add the olive oil, while whisking vigorously to create an emulsion.  Season with salt and pepper to taste.

Yields about 1 cup dressing

Reminds me of spring! This salad is simple, light, and I'm sure very tasty. I love the addition of fresh strawberries and blue cheese. A lovely combo!
