Cheddar Bruschetta

The combination of cheese, garlic, green onions and tomatoes, served on toasted bread is just perfect. This appetizer is great for serving at parties and functions. Just make sure it's served directly from the oven.
Ingredients
- 24 slices French bread (3/4 inch thick)
- 2 large tomatoes, seeded and chopped
- 1 cup sharp cheddar cheese, shredded
- 1/3 cup mayonnaise
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 3 green onions, chopped
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1/2 tsp. ground black pepper
Directions
- Preheat oven to 350 degrees.
- In a large bowl, mix together all the ingredients listed above. Spread mixture over piece of bread and bake in oven for 8-10 minutes. Serve immediately.
Serves 12
- If you prefer the bread more crispy, toast your bread in the oven for a few minutes before you add the tomato & cheese mixture onto the bread.
- You may also want to put the Cheddar Bruschetta under the broiler for 20-30 seconds (after it has already baked), to toast up the cheese slightly and add nice color.
