Fruity, creamy and tropical, are just a few words that come to mind when I'm enjoying this beverage. And although I've never been to the Caribbean, this is what I picture myself drinking on some tropical beach.

Ingredients

• 8 scoops (about 2 1/2 cups) Golden vanilla ice cream
• 2 bananas, cut into 1" pieces
• 2 (8 1/4 oz.) cans, tropical fruit salad
• 1/2 tsp. rum extract
• 1/2 cup pina colada mixer
• 1 cup orange juice

Directions

1. Place all ingredients into blender. Cover, and blend until smooth. Pour into glasses and serve.  Garnish with pineapple wedge.

Yields about 5 cups

• The Tropical Fruit Salad is made by Del Monte.
• When adding the rum extract, add it to taste.  I left the measurement small, just to play it safe.
